Summery Fresh Salmon Fresca

Now that summer is here, many of us are doing our best to eat lighter, healthier meals.

Cooking up one of the most colorful summer dishes perfect for enjoying a light lunch or dinner is Executive Sous Chef, Kevin Dahlen, of The Machine Shed.

Today, Chef Kevin prepares his Feature of the Week: Salmon Fresca. The fresh grilled salmon fillet, sauteed roma tomatoes, red onions and asparagus over wild rice topped with avocado is a summery meal perfect for enjoying on the patio.
